Cowboy Caviar

1 1/2 tbsp. olive oil

2 tbsp. red wine vinegar

1 tbsp. Tabasco or red hot

2 cloves garlic (minced or chopped)

1 firm ripe Avocado (diced)

1 can black beans (rinsed)

1 can shoe peg white corn (drained)

2/3 cup thinly sliced green onion

2/3 cup fresh cilantro (chopped)

2-3 Roma tomatoes (chopped)

3/4 tsp. cumin

Mix all together.  Serve with nachos
